We hardly do dishes anymore in the van.  …other than a few pieces of silverware and a rinse out of the Vitamix.  So, we are eternally looking for ways to eat really good food without a lot of work.  One thing we eat a lot of on the road is this lunch.

Almost every great grocery store or co-op has good tuna, deviled eggs and yummy chips.

These chick pea chips are new to us.  The Santa Barbara pistachios are in the kitchen box a lot.   If we’re not buying them in person in California, they are easily shipped to your door.  They are just better.

This tuna is an inspiration from The Farm Stand in Hood River, a mix of tuna, celery, apple, Veganaise, mustard, cumin and dill from the garden.
